Preserves are fresh food products that undergo the sterilization process and are sometimes cooked and placed in sterilized, tightly sealed, hermetically sealed cans.
We can therefore say that preserves are a way of prolonging the validity of food.
The process of obtaining these products may vary slightly between product, but generally there are three main steps.
These go through processing, sealing and heating of the cans, in order to eliminate possible pathogenic bacteria present.
